ITALIAN SAUSAGE
POTATOES with GREEN PEPPERS
1 medium onion, sliced
2 green peppers, sliced *add 1 red pepper sliced for color if desired
3 to 4 medium potatoes, quartered
2 tablespoons olive oil
salt ligthly to taste
pepper to taste
1 1/2 pounds Totta Italian sausage, cut in serving links
In large skillet, saute onion, green peppers, add red peppers if desired and potatoes in olive oil.
Add salt and pepper. Cover and simmer 10 minutes. Uncover and turn potatoes, add sausage cover
and cook until sausage and potatoes are cooked about 45 minutes. Serves 4
