ITALIAN SAUSAGE and POTATO SOUP
1 pound Totta Italian Sausage, sliced
1/2 cup chopped onions
2 cans (1 pound each) tomatoes
4 potatoes, pared and diced, to make 6 cups
1/4 cup chopped parsley
1 cup diagonally sliced celery
2 tablespoons chopped celery leaves
1 1/2 cups water
1 tablespoon salt
2 beef bouillon cubes
1 bay leaf
1/2 teaspoon dried leaf thyme
1/4 teaspoon pepper
1 tablespoon lemon juice
In large saucepan or kettle, brown sausage over medium heat. Add chopped onion and cook 5 minutes. Add remaining ingredients. Bring to a boil, reduce heat and simmer uncovered 40 minutes, or until potatoes are tender. Serves 6
